The grapes were carefully foot-trodden in 1000-liter vats, preserving tradition and the integrity of the fruit. Fermentation took place in ancient chestnut wood vats over 100 years old, lasting 15 days with manual pump-overs. After malolactic fermentation in stainless steel tanks, the wine was split: half returned to the vats, while the other half aged in new French oak barrels for 12 months. This process, devoid of modern machinery, ensured the preservation of the wine’s essence and authenticity.
