Porttable Porto White
Porttable Porto White — A white Port made by the region’s traditional method: after partial destemming the grapes are crushed in stone lagares and fermented under controlled temperature, the fermentation stopped by the addition of grape spirit — and it is that interruption which preserves the grape’s natural sugar, not any addition of sugar. Ageing in wood follows.
The blend draws on classic Douro whites — Códega do Larinho, Malvasia Fina, Viosinho and Gouveio — and is bottled at 19% alcohol.
This is not a Port for contemplation, and does not set out to be one: it does exactly the job it was made for, which is to be drunk cold and over ice.
Serve well chilled, between 8 °C and 10 °C, as an aperitif — and above all as a PORT & TONIC, over ice with a slice of lemon and mint. That serve is what brought white Port back to the market, and it is worth suggesting explicitly to customers, because most do not know it exists. At the table: nuts, olives, fresh cheeses and savoury starters.
In a shop this is a rotation bottle and a summer one, at the opposite end from the keeping Ports — and it answers the question of anyone wanting an aperitif that is neither a white wine nor a sparkling.
