Adega Mayor Esquissos Pinote No Ar 2021
Esquissos Pinote No Ar 2021 is an unconventional creation from Adega Mayor, a wine that challenges expectations and explores new dimensions of Pinot Noir in the Alentejo region. Part of the “Esquissos” range, this wine embodies creative freedom and experimentation, resulting in a distinctive, elegant and surprising profile — a true statement wine that breaks with tradition.
Following manual harvest and careful grape selection, fermentation took place under controlled temperature in large French oak vats. The wine was then aged for 18 months in used French and Austrian oak barrels, filled to two-thirds capacity to encourage a biological ageing process similar to Jerez, with the formation of a natural “flor” yeast layer. This gives the wine its unique oxidative and complex character.
Perfect to pair with charcuterie boards, cured meats and cheeses, or even sushi, where its freshness and complexity create exciting contrasts.
